Chocolate Zucchini Bread
4 eggs 1 tsp. salt3 cups sugar 1 1/4 tsp. baking powder
1 1/2 cups oil 1 1/4 tsp. soda
1 1/2 tsp. vanilla 3 cups grated zucchini
3 cups flour 1 cup chopped nuts
1/3 cup cocoa 1/2 cup chopped dates
Beat eggs until frothy. Gradually add sugar and oil. Add vanilla. Sift dry ingredients and fold into creamed mixture. Stir in zucchini, nuts and dates. Bake at 350* - 1 hour or more. test with toothpick
