Orange Cinnamon Blueberry Muffins
5 cups flour 2 1/2 cups orange juice1 1/4 cup sugar 1 1/4 cup milk
5 Tbsp. baking powder 2 1/2 cups blueberries
2 1/2 tsp. salt 10 Tbsp. sugar
5 cups oatmeal 5 Tbsp. flour
15 Tbsp. oil 1 1/4 tsp. cinnamon
5 eggs 5 tsp. melted butter
Stir together the first 4 ingredients. Add oatmeal. Add oil, eggs, juice, milk, and blueberries. Stir only until dry ingredients are moistened. Fill papered muffin cups 2/3 full. Thoroughly combine remaining ingredients and sprinkle over batter in muffin cups. Bake at 425* about 15 minutes. Makes 48 muffins.
