Perfect Corn Bread
A delicious, light bread that is delicious with any meal.

Perfect Corn Bread

1 cup flour                                                    1 cup yellow corn meal
4 tsp. baking powder                                     2 eggs    
3/4 tsp. salt                                                  1 cup milk
1/4 cup sugar                                                1/4 cup soft butter

Sift flour with baking powder and salt; stir in sugar and corn meal. Add eggs, milk, and butter. Beat with electric beater until just smooth, about 1 minute. (do not overbeat) Pour into greased 9" pie tin. Bake at 425* for 20-25 minutes. Or pour into 12 greased muffin cups and bake at 425* for about 15 minutes.
