Zuccini or Carrot Bread

Zuccini or Carrot Bread

1 cup grated carrot or zucchini                   1/2 tsp. baking soda
1/2 cup oil (or applesauce)                            1/2 tsp. salt
1/2 cup honey (or brown sugar)                    1 1/2 tsp. cinnamon
2 eggs                                                        1/2 cup nutmeg
1 tsp. vanilla                                               1/2 tsp. raisins
1 1/2 cup whole wheat or white flour             1/2 cup chopped nuts (optional)

Grate carrots or zucchini. Beat together oil and honey. Beat in eggs and vanilla. Sift dry ingredients and add to liquid mixture. Stir in nuts and or raisins. Bake at 350* in loaf pan for 45-60 minutes or muffin tins for 12-15 minutes. Cool in pan 10 minutes. Invert onto wire rack. Freezes well.
