Chocolate Oatmeal Cake
The favorite cake of the family, asked for on nearly every birthday

Chocolate Oatmeal Cake

3 3/8 c. hot water                                                  3/4 c. whole wheat flour

2 1/4 c. oatmeal                                                      2 1/4 tsp. baking soda

2 1/4 c. brown sugar                                                2 1/4 tsp. cinnamon

1 c. butter                                                               1 1/8 teaspoon salt

3 jumbo eggs                                                          9 Tbsp. cocoa

1 1/2 c. flour


Pour hot water over the oatmeal and let stand. Cream the sugar and butter. Beat the eggs into the creamed mixture. Sift the flour. Measure and sift with the soda, cinnamon and salt. Add dry ingredients to creamed mixture, then stir in the oats: beat well. Turn into a greased and floured 9x13x2" cake pan. Bake at 350 for 35 minutes.
