Ginger-Molasses Cookies2 eggs 1/2 tsp. ground allspice
1 cup brown sugar 1/2 tsp. ground cinnamon
2/3 cup molasses 1/2 tsp. ground cloves
1/3 cup butter, softened 1/2 tsp. ground ginger
1 1/2 tsp. baking soda 4 1/2 to 5 1/2 cups flour
1/2 tsp. salt
Beat first 10 ingredients and 1 1/2 cups flour on low speed until just mixed, constantly scraping bowl with rubber spatula. Increase speed to medium and beat 2 minutes, occasionally scraping bowl with spatula. With wooden spoon, stir in 3 to 4 cups more flour to make a stiff dough. Divide dough in and wrap with plastic wrap; refrigerate at least 30 minutes or up to 2 days.
Preheat oven to 350*. Roll out dough, cut into shapes, and cook 12 to 15 minutes. Have fun, and decorate!
