Quick Chicken Broccoli Stir Fry
A recipe for my favorite kind of Chinese Food

Quick Chicken Broccoli Stir Fry

2 whole chicken breasts           1/4 cup chicken broth or water
2-3 Tbsp. soy sauce                  1 large onion, sliced
1 Tbsp. cornstarch                   1 package frozen broccoli, or 4 cups fresh

3 cups cooked brown rice

Cut chicken into strips. Put soy sauce in a 2-cup measuring cup and add enough water to make 1 cup. Stir in cornstarch and set aside. Prepare all ingredients as directed. Heat wok, and add chicken broth or water. Stir-fry chicken until meat is white. Add vegetables, and stir-fry over high heat until vegetables are tender-crisp. Cover, and steam 1-2 minutes. Add cornstarch mixture, and stir until sauce is thick and clear. Serve over hot brown rice.
