Tuna Under Biscuits
Tuna Under Biscuits is a family favorite for birthdays and special dinners.

Tuna Under Biscuits

White Sauce:
9 Tbsp. butter                                                         dashpepper
9 Tbsp. flour                                                           3 cans tuna
4 1/2 cups milk                                                       6 cups peas
3/4 tsp. salt                                                             1 cup water

Melt butter over low heat. Off heat blend in flour until smooth. Gradually add milk, stirring constantly. Cook over medium heat until sauce thickens and comes to a boil. Reduce heat, simmer 2-3 minutes. Add salt and pepper. Stir in tuna, peas and water. Pour into deep baking dishes, place in oven, and set at 425*. Prepare biscuit dough:

8 cups flour                                                           1-2 cups butter
8 tsp. baking powder                                              2 2/3 cups milk  
2 tsp. salt                                                              4 1/2 cups grated cheese
 
Stir dry ingredients together. Cut in butter until crumbly. Add milk until dough forms into a ball. Knead gently 5-10 times - don't not overwork or biscuits will be tough. Roll into a 10x12" rectangle. Sprinkle with cheese. Roll jelly roll fashion, sealing with your fingers as you roll. Seal ends and slice into 1" biscuits. When tuna mixture is hot and bubbly, remove from oven. Arrange biscuits on top, crowding if necessary. Return to oven for 20-30 minutes until biscuits are brown.
